What started as a small dream—roasting coffee in tiny batches, perfecting flavours, and serving something honest—has grown into a community built on warmth, connection, and care. Every bag we roast and every cup we pour carries our belief that coffee should feel like home: comforting, familiar, and made with intention.

About Us

We’re Soni and Isha — husband and wife, partners in life, and the people behind Aves Coffee Co. Our journey is rooted in a shared love for nature, coffee, and community, and a belief that what we create should always be guided by care and intention.

Soni brings his background in environmental science into everything we do. Growing up in Gujarat, India, and later completing a Master’s focused on the Status and Distribution of the Indian Sarus Crane, he developed a deep respect for ecosystems, wildlife, and conservation. That respect shapes how we source and roast our coffee today. Every batch is roasted by Soni with patience and precision, honouring the land it comes from and the farmers who grow it. He also leads our wholesale partnerships, working with cafés and businesses that believe in ethical sourcing and environmental responsibility.

Isha brings the heart and creativity behind how Aves feels. Born in Mumbai, she began her academic journey in biomedical engineering before pursuing a Master’s in Training & Development — a path that shaped her love for learning, people, and meaningful experiences. A passionate trekker and nature lover, her compassion for birds and the environment is woven into the soul of Aves. She leads our café operations, manages our website and brand identity, and shapes how our story is shared. As an expert barista with a love for specialty coffee and latte art, she pours care and intention into every cup, creating moments of warmth and connection for our guests.

Together, we craft exceptional coffee and tea, protect the environment we care so deeply about, and treat people fairly at every step — from farmers and partners to our customers and community.

In August 2025, our story grew even more meaningful with the arrival of our son, Aavir. He is already a part of the Aves family — a gentle reminder of the future we’re working toward and the values we hope to pass on. His presence has deepened our commitment to sustainability, community, and creating something lasting.

Our Journey

Aves Coffee Co. began in the winter of 2020, born from a desire to create bird-friendly, environmentally sustainable, and ethically sourced coffee in the Durham region. Drawing from our academic and professional experiences, we carefully considered every aspect of the business — from sourcing and roasting to creating good jobs in the community.

After sourcing second-hand equipment, furniture, and honing their craft, Aves Coffee Co. officially opened its doors in December 2021, offering carefully roasted coffee that is ethical, sustainable, and full of flavour.

Our Mission

We live our values every day through three guiding pillars:

   Our coffee is roasted in small batches for freshness and flavor, while our teas are blended with care and attention to detail.
2. Protect the Environment
   Our coffee is certified bird-friendly, organic, and fair trade — grown in harmony with the environment. Our teas are ethically sourced, and we proudly support local organizations protecting nature.
3. Treat People Fairly
   From farmers to customers, we prioritize respect and transparency. We ensure fair wages, safe work conditions, and continue building a community rooted in care, equality, and integrity.

In the future, we aim to:

• Establish a registered non-profit to support environmental initiatives in Durham.
• Expand bird-friendly coffee to larger retailers, encouraging conscious consumer choices.
• Collaborate with local businesses and design products aligned with our values.
• Host events that strengthen Oshawa’s downtown community.
• Create more safe, well-paying, and inclusive jobs for local residents.
